2nd pancake recipe comin’ atcha! This thread just makes me so happy- just like these Triple-Berry Pancakes do! This recipe was my first true pancake project; it popped into my hangry head (yes, HANGRY) one morning while nannying and food-deprived. An added bonus: my nanny girl LOVED them😁
When looking into my fridge to see what ingredients I had to work with, I noticed the abundance of berries I had. I know blueberry pancakes are always a crowd favorite, but why not hype them up even more with the help of two more berries?! And thus, the Triple-Berry Pancake was born.
—Batter (same for all the pancake recipes I post): 1 mashed banana & 2 eggs (ratio rule of 1:2 for how much batter you want to make)
—Toppings: 3 sliced strawberries, 6 sliced blueberries, 5 sliced blackberries, 1 tbsp chopped pistachios, dash of cinnamon and 2 tbsp honey
—Directions: First, prepare your batter. In an appropriate sized bowl (based on how much batter you’ll be making), peel and mash your bananas. Use the ratio-rule and add the proper amount of eggs. Whisk together with a fork. Next, take a large saucepan to medium heat on the stove. Spray the pan with non-stick spray. Once heated, pour your desired amount of batter into the pan. Once the bottom of the pancake is firm, use a spatula to flip cake onto its other side. After your pancakes are cooked thoroughly, place them on a plate and add your berries, honey, pistachios and cinnamon.
