I can’t believe I have completed my Omaha Farmers Market Tour for the summer- it feels like I was experiencing the wonders of these events for the first time not too long ago.

Each market I had the pleasure visiting was unique in its own way and brought something new to the table. I was even blessed enough to have great company on each trip! Starting with my supportive mother, continuing with my forever friend Braeden, and ending with two of my besties, Teryn and Katelyn. These two gracious souls agreed to make the trip to downtown Omaha on such short notice at the crack of dawn with me on Saturday morning, but boy was it worth it!

Each of us bought a beautiful bouquet handcrafted by a local farmer placed in an adorable hand-made vase by his wife. For only $5 each, Katelyn bought two (😆) and Teryn and I each got one. I’ll reuse that cute piggy pink vase forever! I urge you to make a trip to his stand, Sunderman Produce, to add a lovely centerpiece to your kitchen, too!

Some other creative aspects the Old Market farmers market included were homemade dog treats, a make-your-own terrarium stand, a large variety of fruit salsas, an abundance of fruits, spaghetti squash, golden beets, and multi-colored tomatoes & peppers. A taco truck even made an appearance!

Another stand dedicated to gorgeous bouquets…flowers are just as important to overall health as food is people! And doesn’t this crafty sign just blow you away?! Flora’s Dial is also a fabulous stand to buy from to color your home.

By far my favorite stand display! There are so many colors and different options of produce (including golden beets) to choose from, and the woven baskets are the perfect touch to make buyers content knowing the veggies are straight from the farm.

The most creative idea I’ve ever seen- a make-your-own terrarium stand!! (I’m regretting my decision to not make one now…it would’ve been a great addition to my dorm room)

Of course I couldn’t pass up a stop to The Gourmet Granola stand- after all, they are my favorite granola brand. What’s not to like when their mission is to include all natural ingredients, no added sugars, be low fat and low calorie AND gluten-free? It is so hard to find a granola brand that follows these exact guidelines, and I’m so fortunate to have one right in my hometown of Omaha, NE. I was talking with the owner on Saturday and she announced the release of a Pumpkin Spice flavored granola this fall! I’m going to order on their website and stock up because my pumpkin-loving self will need this granola to get through the upcoming weather and long study days in the library.

Reflecting on my first summer touring the different farmers markets in my community, I am thrilled to say I’ve never felt closer to a group of people who care so much about promoting local businesses. I’ve learned so much by just taking a little bit of my time to visit a few markets and experience what each one had to offer. Healthier alternatives are easier to access than you might think, and there’s endless opportunities at your local farmers market.

Thank you to all the people I met throughout this summer’s journey, and thank you to those who attended with me! I am so excited for next summer’s adventures! Until May Omaha…

Banana Bread

I wish ya’ll could smell my kitchen right now…

I’m serious, someone needs to invent a “Banana Bread” scented candle.

This childhood favorite treat has been remastered and transformed into a guilt-free munchie that is wonderful for breakfast, dessert, or a mid-day snack. While preserving the main concept of “Banana Bread”, this recipe has substituted certain ingredients that have nutritional benefits to make this bread a healthy one.

I got my inspiration for this recipe from my new favorite food Instagram-er, @whythehealthnot (everyone needs to go check out her page- she’s brilliant behind the lens and captions her photos in a way that makes me want to read more! Oh, and her variety of meals are pretty great too😛)

Of course I added my own touch to this recipe by making it higher in protein with the use of Arbonne vanilla protein powder and Arbonne protein boost. These ingredients are completely optional, but are a great source of plant-based protein for your day!

🍌🍞Banana Bread🍞🍌

Batter: 2 ripe bananas, 3 eggs, 1 cup almond flour, 1/4 cup milled flaxseed, 1 tsp baking powder, 1 tbsp cinnamon, 1 tbsp coconut oil, 2 tsp vanilla extract, 1 tbsp honey, 1 scoop Arbonne Vanilla Protein Powder (optional) and 1 scoop Arbonne Protein Boost (optional)

Toppings: 1 tbsp sliced almonds and a dash of cinnamon

Directions: blend all batter ingredients in a food processor until evenly combined. Pour batter into a greased bread pan and bake for 40 minutes on 375 degrees.

Tips: use a toothpick to determine whether the bread is cooked thoroughly by inserting it into the center of the bread once the 40 minute timer goes off. If residue remains on the toothpick, let it bake for another 5-10 minutes. If nothing appears on the toothpick, your loaf is done!

To make this a breakfast meal, spread almond butter on one slice of bread and finish it off with fresh banana slices.

Double-Blueberry Pancakes

My all-time favorite pancake flavor just got TWO times better.

Happy Monday everyone! These double-blueberry pancakes provide the perfect amount of fuel to start the day off right. I made them extra fruity by putting 1/4 cup blueberries in the batter to be cooked on the skillet and a handful of fresh ones for garnishing.

🔵🍌🥞Double-Blueberry Pancakes🥞🍌🔵

Batter: 1 mashed banana + 2 eggs (ratio rule of 1:2 for how much batter you want to make) and 1/4 cup blueberries

Toppings: 1 tbsp KIND Vanilla Blueberry Granola, handful of fresh blueberries and 2 tbsp honey

Directions: First, prepare your batter. In an appropriate sized bowl (based on how much batter you’ll be making), peel and mash your bananas. Use the ratio-rule and add the proper amount of eggs. Whisk together with a fork. Next, take a large saucepan to medium heat on the stove. Spray the pan with non-stick spray. Once heated, pour your desired amount of batter into the pan. Once the bottom of the pancake is firm, use a spatula to flip cake onto its other side. After your pancakes are cooked thoroughly, place them on a plate and add your fresh blueberries, granola, and honey.

Cherry Walnut Pancakes

Sweet summertime calls for tart cherries and an early morning calls for pancakes for breakfast. This combo is hotter than the summer heat🔥

I used two different types of cherries to make this pancake dish look like a pretty summer sunset (I think I achieved this vision) and chopped walnuts to provide a satisfying crunch of protein.

🍒🌰🥞Cherry Walnut Pancakes🥞🌰🍒

Batter (same for each pancake recipe I post): 1 mashed banana + 2 eggs (ratio rule of 1:2 for how much batter you want to make)

Toppings: 1 tbsp honey, 2 tbsp chopped unsalted walnuts, 5 halved and pitted Reiner cherries, 5 halved and pitted Bing cherries and a dash of cinnamon

Directions: First, prepare your batter. In an appropriate sized bowl (based on how much batter you’ll be making), peel and mash your bananas. Use the ratio-rule and add the proper amount of eggs. Whisk together with a fork. Next, take a large saucepan to medium heat on the stove. Spray the pan with non-stick spray. Once heated, pour your desired amount of batter into the pan. Once the bottom of the pancake is firm, use a spatula to flip cake onto its other side. After your pancakes are cooked thoroughly, place them on a plate and add your cherries, chopped walnuts, honey and cinnamon.

PB & J Pancakes

How do you like your Peanut Butter and Jelly sandwiches? I like mine pancake style.

You’re probably wondering, “Why the heck are there grapes on a pancake?” But don’t be that quick to judge- they’re the perfect fresh fruit compliment to the PB&J theme and taste GREAT. Peanut Butter & Jelly sandwiches have evolved over the years– they’re no longer limited to grape jelly. I decided to keep my PB&J Pancakes traditional with fresh grapes and low-sugar grape jelly, but they can easily be turned into a different jelly/fruit combo! Next I want to try Raspberry Jelly pancakes with fresh raspberries😍

Toppings: 1 tbsp chunky peanut butter (melted), 2 tbsp low-sugar grape jelly, 5 sliced red grapes

Directions: First, prepare your batter. In an appropriate sized bowl (based on how much batter you’ll be making), peel and mash your bananas. Use the ratio-rule and add the proper amount of eggs. Whisk together with a fork. Next, take a large saucepan to medium heat on the stove. Spray the pan with non-stick spray. Once heated, pour your desired amount of batter into the pan. Once the bottom of the pancake is firm, use a spatula to flip cake onto its other side. After your pancakes are cooked thoroughly, stack them on a plate and add your jelly, melted peanut butter, and fresh fruit.

Apple Cinnamon Pancakes

Nothing yells “homemade” like Apple Cinnamon Pancakes.

These crisp, fluffy cakes make any fruit lover content. And who doesn’t like apples? Their uses are virtually endless.

There are so many ways to get creative and personalize these Apple Cinnamon Pancakes. The recipe is flexible and tastes great with different ingredients. Below I’ve listed the ingredients I’ve used in the past to make these beauties!

🍎🥞Apple Cinnamon Pancakes🥞🍎

Batter (same for all pancake recipes I post): 1 mashed banana & 2 eggs (ratio rule of 1:2 for how much batter you want to make)

Toppings: 1 tbsp PB2 powdered peanut butter, 1 tbsp natural peanut butter (melted), 3 thin apple slices + 1/4 apple diced in small chunks, 1 tbsp honey, 1 tbsp flaxseed and 1 tbsp sliced almonds

Directions: First, prepare your batter. In an appropriate sized bowl (based on how much batter you’ll be making), peel and mash your bananas. Use the ratio-rule and add the proper amount of eggs. Whisk together with a fork. Next, take a large saucepan to medium heat on the stove. Spray the pan with non-stick spray. Once heated, pour your desired amount of batter into the pan. Once the bottom of the pancake is firm, use a spatula to flip cake onto its other side. After your pancakes are cooked thoroughly, place them on a plate and add your thin apple slices, apple chunks, honey, melted peanut butter/PB2 powdered peanut butter, cinnamon and almond slices.

Triple-Berry Pancakes

2nd pancake recipe comin’ atcha! This thread just makes me so happy- just like these Triple-Berry Pancakes do! This recipe was my first true pancake project; it popped into my hangry head (yes, HANGRY) one morning while nannying and food-deprived. An added bonus: my nanny girl LOVED them😁

When looking into my fridge to see what ingredients I had to work with, I noticed the abundance of berries I had. I know blueberry pancakes are always a crowd favorite, but why not hype them up even more with the help of two more berries?! And thus, the Triple-Berry Pancake was born.
